Exception Chardonnay

Soil: Limestone scree on clay-limestone marls
Vinification : In 2019 we selected for this cuvée only the oldest chardonnay vines of the property. They were harvested between the 7th and the 9th of September. A rather classic earliness nowadays, but a harvest out of norm by its concentration, due to two major climatic episodes (hail at the beginning of July, heat wave at the end of August) and to very important damages of game, the roe deer, which drastically reduced the yields.
The grapes were destemmed and put in the press for direct pressing.
After a week of cold stalling on the lees, the juice was racked, and as soon as fermentation started, put into oak barrels (60% new barrels, 40% of one or more wines). The ageing lasted 11 months. In order to preserve the freshness of the wine in this rich vintage, the malolactic fermentation was blocked.
Bottling took place on September 02, 2020.

Colour
Pretty limpid gold with golden reflections.

Nose
Still on the restraint but with a richness that reveals itself with aeration, on the white fruits, smoked and mineral, a development on the peach and chestnut honey.

Mouth
Powerful, with lemon, plum and sweet almond flavors, with a floral retro-olfaction, a fresh finish, with honey and mineral notes.

12 à 13 °C
WINE PAIRING
Its power and freshness will go well with a wide range of cheeses. It will also be the companion of poultry, noble fish or shellfish.
With age, it will ideally accompany creamy dishes, such as sweetbreads.
Conservation
Ideally to wait one year after putting, then will evolve favorably up to 10 years or more.
