Exception Syrah
IGP Méditerranée – Vin Biologique Carl et Sophie Mestdagh - Harvester Owners
Grape variety : Syrah 100%
Soil : Marls and Clay-limestone, facing due south at an altitude of 500 meters of altitude on the Cengle plateau, at the foot of the Montagne Saint-Victoire.
Vinification : Grapes destemmed and crushed, vatting in parcels with a cold pre-fermentation maceration of about ten days. During the fermentation, the mars is regularly punched the cap. After draining, the temperature is maintained around 20°C (68°F) a quick malolactic fermentation.
Maturing can then begin, in French oak barrels. The objective beign to polish the wine and not to wood it, we have privileged on the one hand demi-muids (600 liters), on the other hand barrels of several wines (2 to 10 vintages), with an average age of 7 years. The wines stayed there for 15 months before being blended in stainless steel tanks and bottled on April 23rd, 2020. We produced 9,800 bottles and 200 magnums.

Colour
Crimson with purple reflections.

Nose
Black fruits (burlat cherry, blackberry, blackcurrant), black pepeer, tapenade, notes of sweet spices and garrigue.

Mouth
Straightforward and smooth attack, ripe fruit, chocolate and pepper flavors. Ampleness and freshness combine with elegance, the tannins are still present but very noble, the finish is long, on aromatic herbs.

16-17 °C (60,8-62,6°F)
WINE PAIRING
A red meat with grilled parsley, a duck confit, a tuna steak with black olives will offer a beautiful agreement on the youth, with the age the dishes in sauce (gardian beef, stews…) will be more and more indicated.
